I first had red eye gravy in a motel in Cumberland Pass.

It is meat drippings to which very strong coffee is added.

It is served over Virginia or Kentucy ham, which is very chewy, dry

ham.



I believe we also found it in a cook book that we bought in one of

the National Park stops in the Smokies.



It's delicious -- at least to coffee lovers.
